The Soup: Chicken Tetrazzini

CHICKEN TETRAZZINI MAKES HOME WRECKIN' EASY


1 (8 oz.) can mushrooms
2 tbsp. butter
1 tsp. salt
1/8 tsp. pepper
2 c. diced cooked chicken
1 can cream of celery soup
1 c. sour cream
1 (8 oz.) pkg. noodles, cooked
Parmesan cheese
Slivered almonds, if desired


Saute mushrooms lightly in butter. Add salt, pepper, chicken, soup and sour cream. Mix. Drain noodles and arrange in long baking dish. Top with chicken mix. Sprinkle liberally with Parmesan cheese (and nuts if desired). Bake at 350 degrees for 25 minutes.

Can We Talk Delicious For a Minute?

Fantastic. Here is an easy and very delicious chicken recipe from Weight Watchers which my sister and I have named Chicken Yum Yum. I'm not an official member of the WWWC (Weight Watchers Weirdos Cult) myself, but if enjoying this dish makes me one of them, so be it; it's that good. Unlike some clam recipes I've posted here, this one is Anne tested, Doodle approved. So put that in your hat and smoke it.

Ingredients:

Four 3 oz boneless skinless chicken breasts or cutlets
3 tablespoons dijon style mustard
2 teaspoons fresh lime juice
1 teaspoon low sodium teriyaki sauce
1 clove of minced garlic
1 pinch of ground black pepper

Directions:

Use a non-stick cookspray (Pam) for your pan or grill. Mix stuff together in a bowl. Dredge chicken in mixture, and then fire it up on your grill (or pan) 4 minutes on each side (until chicken is cooked thru, and not pink in the center, you idiot). Good with steamed asparagus and a few squeezes of fresh lemon or some freakin' salad.

Make it for friends and they'll think you know what the hell you're doing in the kitchen. Just make sure not to tell them it's Weight Watchers or just how easy it is or they'll be understandably suspicious. Wicked good.
