The fella from Brooklyn says "Lengthwise." The fella from Connecticut says, "Circles. How else can you eat it on a hard roll?"

Blech.
Remember to always quadruple-copyright your eggplant photos. Otherwise, the world of intellectual property rights - and the rights of every eggplant - will plunge into complete chaos.
I cut mine in rings because it's easier to fit them into a round frying pan. The long strips don't fit right... unless your are grilling them outside. But that's not eggpalnt parm.
Just so you know, I might make the best eggplant south of Jersey.
